easy keto desserts with coconut flour The best easy keto brownies (made with almond flour)
Hey guys, I’ve recently been getting into the keto lifestyle and I must say, I’m loving it! One of the things I’ve been experimenting with are keto-friendly desserts. I know dessert isn’t necessarily a staple in a healthy diet, but let’s be realistic, sometimes we need a little sweet treat. So, I’ve found two amazing recipes that I wanted to share with you all.
Keto 5-Ingredient Coconut Flour Cookies
First up, we have these delicious coconut flour cookies. What’s great about them is that they only require five ingredients, which makes them super easy to whip up. Here’s what you’ll need:
- 1/2 cup coconut flour
- 1/2 cup unsalted butter (room temperature)
- 1/3 cup keto-friendly sweetener (such as monk fruit or stevia)
- 2 large eggs
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream the butter and sweetener together until light and fluffy.
- Add in the eggs, vanilla extract and coconut flour and mix well.
- Use a cookie scoop or spoon to drop the dough onto the lined baking sheet, leaving a few inches between each cookie.
- Bake for 12-15 minutes, or until the edges start to turn golden brown.
- Remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
These cookies are so delicious and they have the perfect texture. They’re slightly crispy on the outside, but nice and soft on the inside. Plus, they’re keto-friendly, so you can enjoy them guilt-free!
Homemade Keto Cups
Next up, we have these amazing homemade keto cups. Who doesn’t love peanut butter cups, right? Well, now you can enjoy them without the guilt! Here’s what you’ll need:
- 1/2 cup sugar-free peanut butter
- 1/4 cup coconut oil
- 2 tablespoons keto-friendly sweetener (such as monk fruit or stevia)
Instructions:
- Melt the peanut butter and coconut oil together in a bowl in the microwave or on the stove top.
- Add in the sweetener and mix well.
- Spoon the mixture into muffin cups (you can use silicone cups or a muffin pan lined with parchment paper).
- Place in the freezer for 20-30 minutes, or until they’re solid.
That’s it! These keto cups are so easy to make, and they’re the perfect sweet treat. I like to keep them in the freezer so they’re nice and cold when I want to indulge.
I hope you all enjoy these recipes as much as I do. If you have any other keto-friendly dessert recipes, feel free to share them in the comments below!
